POTATOES LYONNAISE

 

Potatoes Lyonnaise. 

Serves four as a side dish.

 

1 large onion sliced

1 1/2 lb potatoes peeled and sliced

1/2 pint of vegetable or chicken stock

Olive Oil 

Lightly grease a shallow oven dish

Layer the potatoes and onions in

the dish seasoning with pepper

(and salt if using homemade stock). 

Finish with a layer of potatoes.

Pour over stock.   Cover dish with

foil and bake in a pre-heated oven

at 190c ( 375f, Gas mark 5) for 1

hour.

Remove foil and brush top of

potatoes with oil.  

Return to oven for a further half

hour.

Garnish with parsley and serve hot.
