POTATO AND BROAD BEAN SALAD

 

Potato and Broad Bean Salad.

(Serves two as light lunch or starter)

 

8 oz new potatoes washed and scrubbed

1 lb broad beans in their pods

1 small round goat's cheese

2 oz smoked streaky bacon diced

A few sprigs of parsley

Crisp lettuce leaves washed and dried

Dressing: olive oil, vinegar, salt, pepper

........

Boil the potatoes in salted water until

just tender.  Meanwhile fry bacon slowly

until crisp.   Remove the bacon from the

pan with slotted spoon and put in

mixing bowl.   Add the drained potatoes

to the bacon pan and fry until brown.

Pod the beans and cook until tender,  

Drain and add to bacon with cooked

potatoes.   Chop the parslley,  slice the

goat's cheese into chunks and add to

the bowl.   Make the dressing and

pour it into the salad.   Put the lettuce

leaves on to the plates and divide the

salad mixture between them.
